Mediterranean Stuffed Zucchini - Review by Paige C
I made this for my parents as a part of a five-course meal. Paired very well with a Sangiovese. They absolutely loved it! We used ground turkey instead of lamb which turned out great. I 100% recommended this recipe, especially if you are doing a Mediterranean meal!
Roasted butternut squash and leek are mixed with pork sage sausage in this quick and easy recipe with a good blend of seasonal flavors.
Coleslaw with an inviting new twist of feta cheese and green onions - sure to become a new favorite! One large head of green cabbage may be used in place of the packaged slaw.
Cumin, nutmeg, and clove flavor these yogurt-marinated strips of lamb.
Spicy baby arugula leaves make a tasty foundation for building a winter salad containing roasted acorn squash, dried cranberries, pistachios, and goat cheese in a homemade dressing with a hint of curry flavor.
Very good and easy mahi mahi filets steamed over yellow onions, button mushrooms and garlic.
Arancini (Italian fried rice balls) are a great warm appetizer that can be easily cooked in the air fryer. Pair with any dipping sauce, such as pesto or marinara.
Peaches are stuffed with a fig and pine nut mixture, soaked in wine, and topped with brandy before baking.
A pleasing blend of ground beef, cottage cheese, mozzarella, Parmesan, egg whites and dried oregano is stuffed into large tubes of cooked manicotti in this satisfying baked dish. Blanket the stuffed pasta with spaghetti sauce, top with cheese and bake.
In Chicken Marbella, as this dish is commonly known, chicken marinates in a sauce of prunes, green olives, garlic, olive oil, and seasonings. It is well worth the time it takes to make, as this marvelous Mediterranean fare is a perfect party dish, and keeps and reheats well.
