Mushroom, Broccoli, and Cheese Stuffed Chicken Recipe

This cheesy broccoli chicken is the perfect comfort food on a cold day. Use thin-sliced cutlets to save some time or cut regular-sized chicken breasts if you prefer.
This was an easy recipe to put together. I did have to make two modifications and added one ingredient. The recipe calls for mayo, and we don't buy mayo because I can't stand it. So I substituted ranch dressing, which worked well. I also substituted medium cheddar for the pepper jack cheese. And then, I added two Tblsp. of bacon bits to the broccoli and mushroom mixture for some extra protein. Next time I will probably brush some ranch dressing on top of the chicken to keep it from drying out as it did. All in all, an excellent dinner that was easy-peasy.
Made this tonight. We really enjoyed it. Just used regular cheddar, but added a bunch of other seasonings, like Italian, Mediterranean, garlic and onion powder. I brushed the top with a bit of mayo, then added the seasonings. Worked very well, and was juicy enough that I was able to baste the dish a couple of times. I am going to try this again, but mix up the veggies, next time. Thinking maybe spinach and peppers, or asparagus.

We really liked this recipe, especially the broccoli "stuffing". It was a nice change from a bread stuffing. I've made it twice now. Once exactly as written, and 2nd time I tried treating the chicken as I do for an oven chicken tenders recipe I make all the time--dipping stuffed breasts in mayo thinned with a little milk, then in panko. That was excellent. Messy as heck, but excellent, and added needed texture. Thanks for the recipe.
