My husband is a confirmed Muffiterian (religiously devoted to blueberry muffins.)I got up the courage to make these last night. I read lots of the reviews, then followed the recipe and directions slowly, carefully and exactly (other than changing batter sugar, as others suggested, to 1/2 white and 1/4 brown, and adding 1//4 tsp cinammon. Also used all brown sugar for the topping.) I shelled out $2 for the fresh blueberries at the market. Anyway, when you follow the original instructions to the letter, your muffins turn out ABSOLUTELY UNBELIEVABLY PERFECT!!!! My husband couldn't believe that I made these. He thought I had some gourmet baker chained up somewhere in the kitchen. Confidence gained, I made a second batch and here I think I figured out where some of the other reviewers went astray. I was impatient, didn't doublecheck my oven temperature with a separate thermometer, didn't let the egg get to room temperature and used a medium instead of a large egg, thereby ending up with too much milk proportion
I really enjoyed this recipe. My only complaint was I wish I had more blueberries for more! I love streusel topping and thought the topping was perfect. Make sure not to overbake! Keep an eye on these and they will have the beautiful white cake with luscious warm blueberries inside! I used to buy the boxed muffin mix with the can of blueberries (and the streusel mix, back when they made it) but these are far better! It is also a good base muffin recipe if you want to use it for something else. I'll hang onto this recipe and try it out for lemon poppy seed muffins, without the topping of course. :D
Ok..I added an extra 1/2 cup of blueberries and 1 tsp vanilla. I'm not too sure about these?? They looked great and smelled wonderful (see picture) but the topping was not right and I have had better blueberry muffins. They were good but not "to die for". Next time I will split the topping recipe in half and add melted butter to make it easier to sprinkle and give it more of a "crumble" topping. But until then I don't think this recipe deserves 5 stars.
First time I made blueberry muffins from scratch. Loved the recipe. Not giving a 5 star because I think Perkins has the best blueberry muffins and although these were good...not quit Perkins good. Still have another cup of blueberries. When this batch is gone I will try another recipe just to compare. Way too much crumb topping..you can quarter the recipe and still have too much. I do love the crumb topping though. I used brown sugar as some have suggested. I also used buttermilk instead of milk for the muffins
