This is actually the exact same recipe I use for regular strawberry jam, except exchanging 1/2 cup of strawberries for the champagne. I absolutely loved it. The champagne adds a little extra and really works. As far as it not setting up, you should wait until the jam comes to a rolling boil after adding the sugar before starting the 1 min timer. That's true for all jelly. I did that and mine set perfect.
