Strawberries and Champagne Jam Recipe
A beautiful strawberry jam with a hint of champagne makes a tasty gourmet gift for the holiday season!
This is actually the exact same recipe I use for regular strawberry jam, except exchanging 1/2 cup of strawberries for the champagne. I absolutely loved it. The champagne adds a little extra and really works. As far as it not setting up, you should wait until the jam comes to a rolling boil after adding the sugar before starting the 1 min timer. That's true for all jelly. I did that and mine set perfect.
This is a favorite in our family at Christmas. The flavor of the sweet strawberries combined with the flavor of the peppers gives this jam a wonderful flavor dimension. This jam is not spicy, but can be made to be spicy by adding more peppers or a few habanero peppers.
I made this as written and it did not set for me, but that turned it into a syrup rather then a jam. It is perfect for syrup but when I make it again I will use less sugar to prevent it from being so overly sweet.
